Ingredients
This recipe makes 4 servings of delicious Indian Rasam.
For the Rasam Base
- 1/2 cup toor dal (split pigeon peas), washed and soaked for 20 minutes
- 4 cups water (divided: 2 cups for dal, 2 cups for rasam base)
- 1 small lemon-sized ball of tamarind (about 1 tablespoon pulp), soaked in 1/2 cup warm water
- 2 ripe tomatoes, finely chopped or pureed
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon jaggery or brown sugar (optional, for balance)
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves, for garnish
For the Homemade Rasam Powder
- 1 tablespoon whole black peppercorns
- 1 tablespoon cumin seeds
- 1 teaspoon coriander seeds
- 2-3 dried red chilies (adjust to your spice preference)
- 1/2 teaspoon fenugreek seeds (methi)
For the Tempering (Tadka)
- 2 tablespoons ghee or vegetable oil
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 sprig fresh curry leaves (about 10-12 leaves)
- 2-3 green chilies, slit lengthwise (optional, for extra heat)
- 1/4 teaspoon asafoetida (hing)
Step-by-Step Instructions
-
Step 1: Cook the Toor Dal
Drain the soaked toor dal. Add it to a pressure cooker with 2 cups of fresh water and 1/4 teaspoon turmeric powder. Cook for 3-4 whistles until the dal is very soft and mushy. If you’re using a regular pot, cook until tender, about 30-40 minutes, adding more water if needed.
Small tip: Cooking the dal until it’s very soft and easily mashed ensures a lovely, creamy base for your rasam.
-
Step 2: Prepare the Tamarind Extract
While the dal is cooking, gently squeeze the soaked tamarind pulp in the warm water. Strain this liquid through a fine-mesh sieve, pressing firmly with a spoon to extract all the tangy pulp. Discard any fibrous residue left in the sieve.
Small tip: Pressing the pulp against the sieve helps you get the maximum amount of concentrated tamarind flavor into your rasam.
-
Step 3: Make the Rasam Powder
In a dry pan, lightly roast the whole black peppercorns, cumin seeds, coriander seeds, dried red chilies, and fenugreek seeds over medium-low heat. Toast them until they become fragrant, being careful not to burn them. Let them cool completely after roasting.
Grind the cooled, roasted spices into a fine powder using a spice grinder or a small blender. This
