Cooking Time & Prep Time

- Cooking Time: 25 minutes
- Total Time: 45 minutes
Small tip: You can peel and chop the sweet potatoes a day ahead and store them in water in the fridge to save time on busy mornings.
Ingredients
Serves: 4-6
For the Dosa Batter:
- 1 large sweet potato (about 300g), peeled and roughly chopped
- 1 cup (180g) rice flour
- 1/2 cup (60g) semolina (rava)
- 1/4 cup (30g) whole wheat flour (atta) – Can be replaced with more rice flour for a gluten-free option
- 1/2 inch ginger, peeled
- 1 green chili (adjust to your spice preference)
- 1/2 teaspoon cumin seeds
- 1/4 cup fresh cilantro, chopped
- Salt to taste (around 1 teaspoon)
- 1.5 to 2 cups water (add gradually)
For Cooking:
- Oil or ghee, for cooking dosas
Step-by-Step Instructions
-
Step 1: Prepare the Sweet Potato
Boil or steam the chopped sweet potato until it’s very tender. This will usually take about 10-15 minutes. You should be able to easily mash it with a fork when it’s ready.
Small tip: For a quicker method, you can also microwave the sweet potato pieces with a splash of water until they are soft.
-
Step 2: Make the Sweet Potato Paste
Once the sweet potato is cooked, drain any excess water thoroughly. Transfer the tender sweet potato to a blender or food processor.
Add the peeled ginger and green chili to the blender with the sweet potato. Blend until you achieve a completely smooth, lump-free paste.
-
Step 3: Combine Dry Ingredients
In a large mixing bowl, combine the rice flour, semolina, and whole wheat flour. Give them a good mix to ensure they are evenly distributed.
Small tip: Sifting the flours can help prevent any lumps from forming in your batter later on.
-
Step 4: Mix the Batter
Add the smooth sweet potato paste from the blender to the dry ingredients in the bowl. Then, add the cumin seeds, chopped cilantro, and salt.
Start adding water gradually, mixing continuously with a whisk or spoon, until you form a smooth, pourable batter. The consistency should be similar to traditional dosa batter – not too thick and not too thin.
Small tip: The exact amount of water needed can vary slightly depending on the moisture content of your sweet potato, so add it slowly.
-
Step 5: Rest the Batter
Once your batter is perfectly smooth, cover the mixing bowl with a lid or plastic wrap. Let the batter rest for about 15-20 minutes at room temperature.
This resting period allows the semolina to soften and the flavors to meld beautifully, resulting in a better texture.
Small tip: If the batter thickens too much after resting, simply add a tablespoon or two of water to adjust it back to the desired consistency before cooking.
-
Step 6: Heat the Dosa Pan
Place a non-stick dosa pan or a cast-iron griddle over medium-high heat. Allow it to heat up thoroughly.
Once hot, lightly grease the pan with a little oil or ghee using a paper towel or an onion half.
Small tip: To test if your pan is hot enough, sprinkle a few drops of water on it. If they sizzle and evaporate quickly, your pan is ready for cooking.
-
Step 7: Cook the Dosas
Pour a ladleful of the sweet potato batter onto the hot pan. Using the back of the ladle, quickly spread the batter in a circular motion, starting from the center and moving outwards, to form a thin, even dosa.
Drizzle a little oil or ghee around the edges and on top of the dosa. Cook for 2-3 minutes, or until the edges begin to crisp up and turn a lovely golden brown.
Small tip: For extra crispy dosas, cook them a little longer on one side without flipping, allowing the bottom to get deeply golden.
-
Step 8: Flip and Finish
Carefully loosen the edges with a spatula and gently flip the dosa. Cook for another 30 seconds to 1 minute on the second side, just until it’s lightly cooked through.
Remove the cooked dosa from the pan and transfer it to a plate. Repeat the process with the remaining batter, lightly greasing the pan as needed for each new dosa.
-
Step 9: Serve Hot
Serve your freshly made, warm Sweet Potato Dosas immediately. They are absolutely delicious on their own or paired with your favorite chutneys or a warm bowl of sambar.
